Yeast cells consume fermentable sugars creating carbon dioxide and aicohol. There are two predominant yeast types used in brewing; ale yeast and lager yeast. Ale yeast (seccharamyces cerevisise) gathers at the top of the wort as it ferments and is best used at temperatures of 60-80°.
